Marinated Small Lamb Chops over Oven Roasted Herb Potatoes
For the longest, I thought my youngest son and I were the only ones in the maternal side of my family who liked lamb. And for thirteen years, I did not know that my spouse likes lamb, as well! I had never made it for us, but I decided I wanted lamb and I was going to have it since beef - from what I had been hearing - was not safe at this time. So lamb, it was to be!
I marinated the lamb chops in...
1 cup of vegetable oil
2 tablespoon stone ground mustard
2 three tablespoons Worcestershire sauce
1 tablespoon each of these dried herbs:
rosemary+ 1 tablespoon, oregano and thyme
I added three tablespoons of lemon juice
I also added 1 rounded tablespoon of fresh diced garlic
And finally, salt and pepper
I tossed the chops in a large bowl with the marinade and let them take a bath for three hours.
When it was about thirty minutes till cook time, I preset the oven to 375-degrees. I then washed and microwaved the baby Yukon and red potatoes (3 minutes). I added the potatoes to a glass pan after tossing them in vegetable oil seasoned with the dry herbs named above, garlic and fresh rosemary sprigs and put them in the oven for 25 - 30 minutes. In a skillet, I added two tablespoons extra virgin olive oil (evoo) over medium heat and began searing the little T-bone looking lamb chops. The searing chops let off a lovely herbal aroma from the marinade. I seared them 2 - 3 minutes per side and removed them. They would oven finish with the potatoes.
Potatoes pre-cooked slightly, seasoned and ready for the lamb chops to oven finish.
I seared the small lamb chops about 2 - 3 minutes per side, removed, added them to the glass pan with the potatoes and oven finished them (20 - 25 minutes).
I placed the lamb atop the potatoes that have been in the oven for 20 minutes. I placed the pan back into the oven for another 20 minutes to allow the lamb to finish cooking.
This is the final product after a final 20 minutes. Remove the chops to cool, plate the potatoes and place the chops atop the potatoes, or, however you wish to plate.
This is a simple dish that does not really need hours to prep. I had the time, so I used it. If you marinate the lamb for thirty minutes, then that's what you do. No stress. You could even place the potatoes in the oven with the lamb on top at 350-degrees and cook it all in the oven for an hour. It's all up to you. In the end, this is a very flavorful dish.
Enjoy!
