Welcome to another episode of "What I Have Been Up To In My Kitchen"......

Hello, my friends!  I am terribly sorry for taking so long to put up another post, but I have been insanely busy the last four weeks in prep for the new school year, and, we are just starting our third week of school.  I have been busy in my kitchen, however, and I want to share a few things with you.  Recipe blogs may follow some of these.  Hope you like them!  If there is a recipe you would like, please let me know, and I will be happy to share it!  Thank You!  

First, I want to share my Beefy Spaghetti Sauce Calzone with you.  Just one of those "this sounds good" moments, I stuffed the calzone with beefy spaghetti sauce, mozzarella cheese and a little salami.  Flavorful, aromatic and filling! 




Next, my Italian Burger stuffed with egg and parmesan.  Below are the burgers in my cast iron skillet.  I have provolone melting over sliced Sweet Italian Peppers from my patio potted garden.   Very tasty!  Did I say they were stuffed with an egg?  Too much fun to make and even more fun to eat!


Next......
 I love pancakes.  Search previous posts, and you will find banana stuffed pancakes and french toast, raspberry pancakes, blackberry pancakes and more.  People LOVE my pancakes. Why? I will share part of that secret with you here.  Oh not, not all of it, as some things Must remain mysterious.  But, above are four of the secret ingredients which I melt, whisk and add to my pancake batter.  Peanut butter, smooth or crunchy, cinnamon, butter and brown sugar.  Want to know what else? You will have to send me a message for that!  :)  


Over the summer, I used my friend's smoker and smoked a rubbed and marinated pork roast and chicken.  I also made a tomato cucumber salad and homemade rosemary and black pepper biscuits.  This was so good!

Ready for a meal that tasted actually very good, but my plating presentation was disastrously ridiculous?  Here ya go.  Grilled Chicken Tenders with Plum Sauce and Fried Garlic and Parmesan Polenta Cakes.  Be warned, the plating is really embarrassing for everyone who is me.....



See? I told you.  Oh the shame.......But it was good!

One of my more successful dishes is my Spice Rubbed and Marinated Grilled Jerk Chicken Sammies.  

The spices are amazing and filled my kitchen with just the best aromas. One of my neighbors walking by smelled this, as I'd had my windows open, and knocked on the door to ask me:  "What goodies are you making tonight?"  My neighbor left with one of the sammies.  Winner Winner, Chicken....you know.  :)
